For CV axle work specifically, symmetric usually wins because you are almost always working on a passenger car or crossover with a short-to-medium wheelbase, and you want the pads landing right under the pinch welds without shifting the vehicle forward or back. Lock spacing and holding the axle flat
CV axle replacement requires the half-shaft angle to stay reasonably flat while you break the outer nut and slide the axle out of the hub. If the lift raises to a fixed height and holds there, you may end up with the axle at a poor angle relative to your torque wrench swing. This is where the incremental locks on a portable scissor really pay. A lift with click-stop locks every two to two-and-a-half inches lets your tech dial in the exact height where the axle sits flat, which reduces bind on the CV joint and makes the extraction faster.
On a dealership floor where techs are paid on flag hours, that is real money. Two minutes saved per CV axle at three or four per day per tech, across a five-tech line and a full year, adds up to hundreds of billed hours. A portable scissor spreads the load across the full deck footprint, but under active raising, more of the load momentarily concentrates near the hydraulic cylinder mount, which is usually center-rear on the frame.
None of this is a problem on a dealership floor, but you do want the floor scanned for prior patch work in the exact spot the lift will park. A patched section, especially one where the original concrete was broken out for a drain reroute or a plumbing rough-in, may have inferior compaction underneath.
